Why load beats index

The glycemic index ranks foods by how fast their carbohydrate raises blood glucose, but it ignores how much of that carbohydrate a real serving contains. Watermelon is the classic trap: a high index, yet so little carbohydrate per slice that its load is trivial. Glycemic load multiplies the index by the actual carbohydrate in the portion, which is why it predicts the size of the rise far better than the index alone.

The bigger lesson this explorer teaches is that meals, not foods, produce glucose curves. Dal next to white rice, vegetables before the starch, protein and fat alongside it, and a short walk afterwards all flatten the same plate. That is also why the curve shown here is a teaching shape rather than a prediction: continuous glucose monitors show that two people can eat the same meal and draw two different lines.
